Home Chef Meal #2 is……

Firecracker Shrimp with Mandarin Oranges and Jasmine Rice

Ingredients:

  • 2 Green Onions
  • ¾ cup Jasmine Rice
  • 1 Red Fresno Chile
  • 4 oz. Mandarin Oranges in Juice
  •  8 oz. Shrimp
  • 2 oz. Water Chestnuts
  •  3 fl. oz. Teriyaki Glaze
  • 3 tsp. Sriracha

  • Cook the rice
  • Prep the ingredients

  • Sear the Shrimp
  • Make the Sauce
    • Funny Story! Let me tell you how that little red chili almost sent me to my death. So this (aside from the rice) is a one pan meal and I love that. However, my boyfriend does not do spicy so instead of putting the Fresno in the sauce, I went to saute it by itself. BAD IDEA! My apartment was basically filled with homemade pepper spray. First I was sneezing, then my eyes were watering. I had to stop cooking to blow my nose. Boyfriend was in the living room and he started coughing too, it was awful. Don’t get me wrong now, I LOVE spicy food…..just not in contact with my eyes and respiratory system.

This meal was also delicious but the Tortilla Chicken from the day before was spectacular. I absolutely recommend Home Chef but it is pricey for weekly purchase so I encourage y’all to use that first box discount if you’re interested.
