Blue Apron Meal #2 is…….
Spiced Chicken & Garlic Rice (with Pipian Sauce & Roasted Honeynut Squash)
- 2 boneless skinless chicken breasts
- 1/2 cup long grain white rice
- 2 cloves garlic
- 1 honeynut squash
- 1 lime
- 1 bunch parsley
- 2 tbsp pepitas
- 1 tbsp Mexican spice blend
- 1 tbsp honey
Unfortunately I took even less pictures this time but I promise I’ll do better.
- Prepare and roast the squash
- Prepare the remaining ingredients
- Cook the rice
- Toast and chop the pepitas
- Cook the chicken
- Make the sauce and plate your dish
This was the first time that I had honeynut squash and it was really really good. I like this meal a lot but the steak from the day before was definitely better. I absolutely recommend Blue Apron at least for a trial because it is expensive.
